From 62-year-old vines on blue marl at the top of the hill. Sixty months in large Slavonian oak, then two years in bottle in the tufa cellar.

In the glass

Nose

Dried rose, tar, sour cherry, liquorice root and a whisper of white truffle as it opens.

Palate

Firm, fine-grained tannins and lifted acidity; red fruit giving way to orange peel and leather.

At the table

Tajarin with butter and truffle, braised beef in Barolo, or a wedge of aged Castelmagno.

Young-vine Nebbiolo with all the perfume and none of the wait. Lovely with hard cheese.

Plush plum and violet with the bright acidity that makes Barbera the table wine of Piedmont.

Barrel-fermented on limestone; hazelnut and lemon curd held taut by a saline line.
